Brewing Oolong Tea

Oolong teas traditionally come from Taiwan and China but other tea growing countries are now also producing Oolong style teas. Oolong teas sit between Green and Black teas as the processing allows a degree of oxidation to take place. Some Oolongs are oxidised to as much as 85% giving way to more woody, rich fruity characteristics. Whilst some Oolongs receive as little as 5% oxidation and would easily pass for a green tea; they can be fresh, sweet, soft and buttery. |
