White tea is the least processed of all teas so it is high in natural antioxidants. The leaf tips and buds are picked, wilted and dried so little oxidation occurs. The resulting teas are delicate and clean tasting.
White teas, like green teas, are sensitive to water temperature. If the tea is infused with water that is too hot it can be rather bitter. Get the water temperature correct and discover the subtle delights of white tea.
